Easy Loaded Mashed Potatoes

Easy Loaded Mashed Potatoes served here with Easy Garlic Chicken.
Look at what I made for dinner tonight!
It was amazing!  I found the chicken recipe via Pinterest and the potatoes were inspired by some side dishes I have pinned there.  I also tossed together a simple salad topped with my hubby’s Garlic Vinaigrette.  The entire meal went from refrigerator to table in less than 45 minutes! And talk about YUMMY!
Be sure to check out my recipe for Easy Garlic Chicken, too.

Loaded Mashed Potatoes ~ Quick and Easy Style

  • your preferred mashed potatoes
  • shredded sharp cheddar cheese
  • green onion
  • bacon pieces

  • Prepare your favorite mashed potatoes as you normally would. I actually used a high quality instant mashed potato mix that I get from my local Costco called Natures Harvest.
  • Sprinkle the remaining ingredients on top. Let the cheese melt a bit. I just put a lid on it for a couple of minutes.
  • Serve.

If you need to cook gluten free and you are new to cooking this way, be sure to check your mashed potato ingredients, bacon, and the shredded cheese for any gluten. It isn't hard to find gluten free mainstream brands of these items, but there are many brands that do have gluten in them.
