I love avocados! It’s a great thing that they are healthy!
You can use them in a variety of yummy ways. I often just smear some on a sandwich or wrap in the place of a condiment such as mayonnaise. There is a lot more flavor going on with the smeared avocado and it is healthier, too.
I also love topping sloppy joes and burgers with avocado and garnishing ANY Mexican orTex-Mex dishes with ample amounts of avocado like I did with my Green Chile and Onion Meatballs and my Taco Peppers and Spanish Cauliflower “Rice”.
Avocado is always a wonderful addition to homemade sushi, spring rolls, omelets, and frittatas to name a few. I also like having a small salad in an avocado half like tomato and cucumber, tuna salad, chicken salad… The possibilities are endless!
Unfortunately, avocado is not a freebie kind of food. You have to eat this fruit (no, it is not a vegetable) in moderation due to the fact that it is a fat. The good news is that it is of the healthy fat variety! I am most definitely NOT an expert on this, so if you want more information on this, you can read more here.

For most of the year, I buy my avocados at my local Costco. I purchase them when they are a bit hard. Usually there is one or two in the bag that are a bit more ripe than the others and I use them accordingly. We live in northern Nevada and I guess since we live so close to California, we are lucky to get some amazing produce at our Costco. I often read about others complaining about their Costco’s produce, but we thankfully do not have that problem (at least at the one I frequent). There are times, though, that I pass on the avocados at our Costco. If they are already really ripe, I just get them at my regular grocery store where I always shop.
Anyway… Here are some more of my favorite ways to enjoy avocados along with a few that I plan on trying in the very near future! By the way… I’m not saying that all of these are healthy, but they do all have avocado. 😉 Not all of these recipes are gluten free written as is, but most (if not all) can be easily adapted to be gluten free.
